Recipe Description

Snake Gaurd Poriyal

Ingredient            Quantity

Snake gourd               1
Salt                             1 tsp + to taste
Turmeric powder          ½ Tsp + ½ Tsp
Asafetida                      ½ Tsp
Dry red chilli whole      3-4
Chana dal                    1 Tbsp
Urad dal                       1 tbsp
Ginger chopped           1Tbsp
Garlic chopped             1 Tbsp
Curry leaves                  8-10
Mustard seeds               1 tsp
Cumin seeds                 1 tsp
Green chilli chopped      2-3
Coriander chopped        1 tbsp

Method
1.Take the snake gourd and using a knife scrape the white skin.
2.Then cut the snake gourd into small parts and slice lengthwise and scoop out the seeds.
3.Cut into small slices and transfer in a bowl.
4.Add 1 tsp of salt and ½ Tsp turmeric powder and mix well, let it rest for 15-20 mins
5.After 15 mins wash the snake gourd in running water and keep aside.
6.Heat oil in pan and add asafetida, dry red chilli whole, chana dal, urad dal, mix well and sauté for 1 mins
7.Add ginger, garlic, curry leaves. Mustard seeds, cumin seeds. Mix well and sauté for 1-2 mins.
8.Add green chilli chopped, snake gourd. Mix well.
9.Add salt, turmeric powder, red chilli powder and mix well.
10.Cover and cook for 10-12 mins
11.Add grated coconut , chopped coriander, and mix well.
12.Remove in a serving bowl and garnish with coriander sprig. Serve hot
