Carrot and Orange Pudding

Serve: 6

Ingredient                    Quantity
All-purpose flour          1 Cup
Bread crumbs              1 Cup
Baking powder             ½ Tsp.
Baking soda                 ½ Tsp.
Ground cinnamon        ½ Tsp.
Ground nutmeg            ½ Tsp.
Butter                           100 Gm.
Sugar                           100 Gm.
Eggs                             3
Raisins                         ½ Cup
Orange segments        8-10
Orange rind                  1 Tsp.
Carrots peeled and grated 1
Orange juice                1 Cup

Method:
In big mixing bowl sieve the flour, bread crumbs, baking powder, baking soda, cinnamon powder, nutmeg powder and keep it aside.

Take another mixing bowl cream together butter and sugar until soft and fluffy.add eggs, mix and wisk it well.

Add raisins, orange segments, orange rind, grated carrot, orange juice, flour mixture fold and mix it well.

Transfer mixture to a silicone mold and bake in preheated oven at 180 c for 35-40 min.take out and serve.
