Recipe Description

Christmas mud cake

Ingredient                    Quantity
Assorted Dried Fruits   1 Kg
Orange Juice                2 cups
Flour                             2 Cups.
Baking Powder             ½ Tsp
Baking soda                  ½ Tsp
Cardamom powder        ½ tsp
Nutmeg powder              ½ tsp
Cinnamon powder           ½ tsp
Butter                               250 gms
Sugar                              200 gms
Eggs                               4 No.
Method:
1. Combine assorted dried fruit and orange juice. Cover and set aside for overnight.
2. Preheat oven to 180* C
3. In big mixing bowl sieve the flour, baking powder, baking soda, cardamom powder, nutmeg powder, cinnamon powder and keep it aside.
4. In another mixing bowl cream butter, sugar and whisk until fluffy. Add eggs mix it well and whisk till smooth and fluffy.
5. Add dry fruits and orange juice mixture, mix it well. Add flour, fold it well and mix all together.
6. Lightly grease 9-inch round cake mold. Line base with butter paper. Transfer all prepared mixture into the mold.
7. Bake in pre-heated oven at 180*C for 35-40 min. after 35-40 min. takeout cake from the oven demold it. Cut it in to the pieces and serve.
