Lauki/Bottle Gourd Chana Dal is a healthful, wholesome lentil and vegetable main dish. Having a low glycemic index, it is especially good for diabetics. A perfect home style recipe and loved by all.
Bottle Gourd/Lauki chana dal
ingredients
Lauki (bottle gourd/doodhi 400 gms peeled and cut into small cubes
Chana Dal (bengal gram) boiled 1 1/2 cup (with the water)
Tomato, finely chopped 2 nos
Cumin Seeds 1 tspn
Dry Red Chillies 2 nos
Asafoetida A pinch
Garlic chopped 1 Tablespoon
Ginger chopped 1 Tablespoon
Desi Ghee 2 Tablespoon
Red Chili Powder 1 tspn
Coriander Powder 1 1.2 Tablespoon
Turmeric powder 1/2 tspn
Tamarind paste 2 Tablepsoons
Coriander Leaves 2 tablespoons
Salt to taste
Oil 2 tablespoons for cooking
Method:-
1. In a pan pour oil and heat.
2. Add cumin seed and let it brown for some time.
3. Now add the whole red chillies and hing and saute for about 10 seconds.
3. Chopped Ginger and Garlic and saute.
4. To enhance taste you can two tablespoons of desi ghee now.
5. One the garlic is lightly browned add chopped onion and saute further.
6. Now add the Chopped tomatoes and salt.
7. Add the spices and cook for about four to five minutes.
8. Add Tamarind paste and cook for about two minutes.
9. Add the bottle gourd/lauki and boiled channa dal.
10. Now cover and cook for about 15 mins or until the bottle gourd is cooked.
11. Garnish with coriander leaves and serve hot.
