Ulta vada pav

Ingredients Quantity
For stuffing
L.g Hing Pinch
Oil 1 tbsp
Cumin seeds 1 tsp
Mustard seeds 1 tsp
Ginger chopped 1 tsp
Green chilies chopped 1 ½ tsp
Curry leaves 5-6 no.
Turmeric powder ½ tsp
Salt to taste
Boiled potatoes 2 no.

Red dry chutney

Oil 1tbsp
Whole Garlic 10- 15no.
Whole Dry red chili 5 no.
Sesame seeds 1 tbsp
Dry coconut 1 tbsp
Salt to taste
Red chili powder 1 tsp

For sweet chutney

Water as required
Tamarind 50 gms
Jaggery 1 ½ tbsp
Red chili powder 1 tsp
Chaat masala 1tsp
Salt to taste
L.g Hing a pinch

For green chutney

Coriander leaves 1tbsp
Mint leaves 1tbsp
Ginger 1 inch
Lemon juice 1no.
Green chilies 3 no.
Chaat masala 1tsp
Water as required
Salt to taste

For batter

Gram flour 1cup
Turmeric powder 1tsp
Carom seeds 1tsp
Salt to taste
Water as required
Oil for frying
Pizza base 5 no.
Butter 1tbsp

Method

1. In pan add oil, hing, cumin seeds, mustard seeds, ginger chopped, green chillies chopped , curry leaves, turmeric powder, salt to taste, and mashed boiled potatoes mix well and keep aside.
2. Now in pan add oil, whole garlic, whole dry red chilies, sesame seeds, dry coconut and sauté for mins and keep aside.
3. In pan add water, tamarind, jaggery, red chili powder, chaat masala, salt to taste, hing and let it boil.
4. Now add the red chili powder and salt to the dry roasted masala and grind it in the mixing jar.
5. Now in mixing jar add coriander leaves, mint leaves, ginger, green chilies, lemon juice,chaat masala,water as required and grind it, now add salt to taste, mix it and keep aside.
6. Now strain the sweet chutney in a bowl and keep aside.
7. Now in pan add butter and toast the pizza base from both the side.
8. In a bowl add gram flour, turmeric powder, carom seeds, salt to taste and water as required and whisk it properly.
9. Now cut the pizza base from the center and apply green chutney, sweet chutney, put some dry red chutney and the potatoe mixture on it and cover it with other cut base and press it from both the side.
10. Now dip the stuffed pizza base in the gram flour batter and put it for frying till it is cooked from both the sides.
11. Voila!! its ready serve it with both the chutneys and dry red chutney.
