Hello and Sat Sri Akal, today i bring you the most popular dish of Indian household. Dal Makhani. For vegetarians this is a must have in Dhaba or in any special occassion. So just enjoy and cherish this very amazing Dal Makhni with me Chef Harpal. Keep smiling and stay tuned.

Ingredient                                    Quantity
For boil:
Sabut Urad (whole black gram) 1½ cup
Water                                         as required
Green chilli slit                           3-4 no.
Ginger julienne                          ½ inch
Salt                                             to taste
Turmeric powder                        ½ tsp

For Tadka:
Ghee                                          4-5 tbsp + 1 tbsp
Asafoetida (Hing)                      ¼ tsp
Cumin seeds                             1 tsp
Garlic chopped                          1½ tbsp
Ginger julienne                          ½ inch
Onion chopped                          2 no. (Small)
Tomatoes chopped                    3 no.
Red chili powder                        3 tsp
Garam masala powder              1½ tsp + ½ tsp
Kasoori Methi                             1 tsp + for sprinkle
Cream                                         for garnish

Method:-
• Soak the whole black gram in 4-5 cups of water overnight.
• Heat water in a pressure cooker. Add the black gram and bring to
boil.
• After one boil, drain the dal and add 6-7 cup of hot water.
• Add green chillies, ginger, salt and turmeric powder and mix well.
• Close the pressure cooker and pressure cook for 8-10 whistles.
• Released the pressure and open the lid and mash and mix well. Keep it aside.
• Heat 4-5 tbsp of ghee in a pan, add hing, cumin seeds, garlic and ginger and mix well.
• Add chopped onion, mix well and sauté for 3-4 min.
• Add chopped tomato, mix well and sauté for 2-3 min.
• Add red chilli powder and garam masala powder, mix well and sauté for 1 min.
• Add boiled dal, mix well and cook for 15-20 min.
• Add kasoori methi and garam masala powder and mix well.
• Remove in serving plate, put 1 tbsp of ghee, garnish with fresh cream, sprinkle some kasoori methi on top and serve hot.
