Recipe Description

This curry made with soya chunks, button mushrooms and plenty of masalas is loaded with flavour and taste.

Ingredients:-

  • Soya bean chunks, soaked and drained – 1 cup
  • Button mushrooms, cut into quarters – 10-12
  • Oil – 2 tablespoons
  • Bay leaves – 2
  • Cumin seeds – 1 teaspoon
  • Garlic, finely chopped – 6-8
  • Ginger, finely chopped – 2 inch
  • Green chillies. Finely chopped – 3
  • Onions, finely chopped – 3 medium
  • Tomatoes, pureed – 5 medium
  • Coriander powder – 1 ½ tablespoons
  • Cumin powder – 1 teaspoon
  • Red chili powder – 1 ½ teaspoons
  • Turmeric powder – ½ teaspoon
  • Garam masala powder – 1 teaspoon
  • Salt – To taste
  • Fresh coriander sprigs – 8-10

 

Method:-

  1. Heat oil in a non-stick pan, add bay leaves and cumin seeds and when cumin seeds change colour, add garlic, ginger and green chillies and sauté for 2-3 minutes. Add onions and sauté further till the onions are lightly browned. Add tomato puree and cook for 6-8 minutes.
  2. Add coriander powder, cumin powder, red chilli powder, turmeric powder, garam masala powder and salt and mix well. Cook for 2 minutes. Add mushrooms and soya chunks and mix well. Add 1 cup water and mix well.
  3. Finely chop coriander sprigs and add to the pan and mix well. Cook till the mushrooms and soya chunks are done.
  4. Transfer the curry into a serving bowl and serve hot.
