Recipe Description
This curry made with soya chunks, button mushrooms and plenty of masalas is loaded with flavour and taste.
Ingredients:-
- Soya bean chunks, soaked and drained – 1 cup
- Button mushrooms, cut into quarters – 10-12
- Oil – 2 tablespoons
- Bay leaves – 2
- Cumin seeds – 1 teaspoon
- Garlic, finely chopped – 6-8
- Ginger, finely chopped – 2 inch
- Green chillies. Finely chopped – 3
- Onions, finely chopped – 3 medium
- Tomatoes, pureed – 5 medium
- Coriander powder – 1 ½ tablespoons
- Cumin powder – 1 teaspoon
- Red chili powder – 1 ½ teaspoons
- Turmeric powder – ½ teaspoon
- Garam masala powder – 1 teaspoon
- Salt – To taste
- Fresh coriander sprigs – 8-10
Method:-
- Heat oil in a non-stick pan, add bay leaves and cumin seeds and when cumin seeds change colour, add garlic, ginger and green chillies and sauté for 2-3 minutes. Add onions and sauté further till the onions are lightly browned. Add tomato puree and cook for 6-8 minutes.
- Add coriander powder, cumin powder, red chilli powder, turmeric powder, garam masala powder and salt and mix well. Cook for 2 minutes. Add mushrooms and soya chunks and mix well. Add 1 cup water and mix well.
- Finely chop coriander sprigs and add to the pan and mix well. Cook till the mushrooms and soya chunks are done.
- Transfer the curry into a serving bowl and serve hot.
