Shalgam Lal Math Matar ka Saag

Ingredient                quantity
Turnip                      4 nos
Amaranth leaves     2 bunch
Green peas             ½ cup
Green garlic            8 -10 nos
Turmeric                  ½ tsp
Salt                          to taste
Oil                           1 tbsp
Dry red chilly           3 nos
Ginger                     1 ½ tbsp
Green chilly             3-4 nos
Onion (chopped)     2 nos
Maize flour              2 tbsp
Tomatoes (chopped) 2 nos
Red chilly powder    1 tsp
Dry mango powder  1 tsp
Garam masala         1 tsp
Water                       ½ cup
Coriander leaves      a sprig
Method :

1.Wash and peel the Turnip & cut them into cube size and keep it aside.
2. Add turnips in pressure cooker add water ,amaranth leaves , fresh green peas, turmeric powder , salt press and mix well .
3. Close the lid and pressure cook for 8 whistles and keep it aside .
4. Take green garlic , remove the root and fine chop it .
5. Heat oil in a deep Kadai ,add dry red chilly , Chopped ginger , green garlic sauté it for 1 mins .
6. Add chopped green chilly , sauté it for 1 Min.
7. Add chopped onions & Saute for 3-4 mins on slow flame .
8. Open the lid of pressure cooker , churn the mixture and mash well using wooden churner.
9. Add Maize flour Add Maize flour churn & mash well with wooden churner & keep aside.
10. Add tomatoes , remaining green peas , salt , red chilly powder , dry mango powder , garam masala , sauté it well for 3-4 mins .
11. Once oil start floating on top , add half of water and cook it for 1 min . 12. Now transfer the saag mixture to the kaadhai , mix well &Cook for 20 min on medium flame. Stir continuously.
13. Remove in serving bowl, garnish with a coriander leaves and serve hot .
