Recipe Description

Multigrain pinni
Serving –4 nos
Preparation time – 15 mins
Cooking time – 30 mins

Ingredients                     Quantity
Ghee                                 ½ cup
Tragacanth gum (Gond)   2 tbsp
Almonds Chopped            1 tbsp
Raisins                              1 tbsp
Pistachio chopped             1 tbsp
Melon seed                        1 tbsp
Wheat flour                        1 cup
Amaranth flour                   2tbsp
Ragi flour                           2 tbsp
Oats flour                           2 tbsp
Jowar flour                         2 tbsp
Cardamom powder            ½ tsp
Dry ginger powder             ½ tsp
Jaggery grated                   ½ cup

Method :
1. Heat ghee in a kadai, add Tragacanth gum (gond) and let it fry until its puffed up.
2. Transfer the fried Tragacanth gum(gond) in a wooden pestle and crush it well .
3. Transfer the mixture in parat and keep aside .
4. Now fry the chopped almonds and cashew nuts in hot ghee for 30 sec. and transfer it to parat.
5. Now fry raisins till they puff up and transfer into a parat.
6. Add chopped pistachio on parat.
7. Fry the melon seeds in hot ghee for 30 sec. and transfer into the parat.
8. Keep the flame low and add wheat flour, amaranth flour, ragi flour, oats flour and jowar flour, mix well and cook for 6-8 mins on medium flame or until the raw aroma goes away .
9. Switch off the flame and mix well for 2 min.
10. Transfer the flour mixture in to the parat, add cardamom powder, dry ginger powder, and jaggery and mix well using wooden spatula.
11. When mixture is warm, Divide into equal portions and shape each portion into finger shape.
12. Put almond on top and serve.
