Shalgam ka Saag (Turnips) is a typical winter recipe made in Punjabi households and i remember my mother would cook and we would relish with with Makai ki Roti, now i have made this beuatiful recipe for you to cook at home so that this recipe stays alive and people relish the goodness of Turnips

Shalgam Ka Saag
Ingredient                                 Quantity
Shalgams (Turnips)                     4-5 no.
Turmeric powder                         ½ tsp + ½ tsp
Salt                                              to taste
Oil                                                2 tbsp
Asafoetida (Hing)                        ¼ tsp
Cumin seeds                                1 tsp
Ginger chopped                           1½ tbsp
Garlic chopped                             1½ tbsp
Green chillies chopped                 5-6 no.
Onion chopped                             2 no.
Tomato chopped                           3 no.
Red chilli powder                          ½ tsp
Maize flour (Makai atta)                1½ tbsp
Ghee                                             2 tbsp

Method:
1.Wash, peeled and cut the shalgams into cube size and keep it aside.
2.Boil water in pressure cooker; add turmeric powder, salt and shalgams cubes and Close the lid and pressure cook for 2-3 whistles.
3.After 3 whistles, release the pressure and open the lid and remove the shalgams in cold water.
4.Drain the shalgams and grind coarsely. Keep it aside. 5. Heat oil in a pan, add hing and cook for 30 sec.
6.Add cumin seeds, mix well and sauté till its splutter.
7.Add chopped ginger, garlic and green chillies, mix well and sauté for 1 min.
8.Add chopped onion, mix well and sauté for 3-4 min. 9. Add chopped tomatoes and mix well.
10.Add salt, turmeric powder and red chilli powder, mix well and sauté for 4-5 min.
11.Add Makai atta, mix well and sauté for 1-2 min.
12.Add grinded shalgams, mix well and sauté for 10 min.
13.Add ghee and mix well.
14.Remove in serving bowl, garnish with coriander leaves and serve hot.
