Aloo Surti (Potato and Butter beans=Seam ki Subzi) stir fried Subzi is a unique homestyle dry Indian Vegetarian Curry which I remember my mother would make when i was a child and relished eating with Yellow dal, steamed rice, now you can make it at home
Surti is also known as Seam in Hindi, Urohi in Assam/Chikadhkari-Chapradavare in Karnataka/Cheema-Cheemi in Gadhwal/Baloor in Madhya Pradesh/Amarapayer in Kerala/Shenga-Pavta in Maharastra

Aloo Surti Papadi ki Subji

Ingredient                           Quantity
Potatoes                            3 no.
Surti Papadi                      250 gm.
Oil                                    2-3 tbsp
Cumin seeds                   1 tsp
Carom seeds (ajwain)     ½ tsp
Green chilli chopped        2-3 no.
Turmeric powder             ½ tsp
Red chilli powder            1 tsp
Coriander powder           1½ tbsp
Dried mango powder      1 tsp
Salt                                 to taste
Fresh coriander chopped 2-3 tbsp

Method:
1 Wash and remove the stem from the papadi and cut into small pieces. Keep it aside.
2. Wash and cut the potatoes into small cube size. Keep it aside. 3. Heat oil in a pan; add cumin seeds, carom seeds and green chillies, mix well and sauté till seeds are splutter.
4. Add potatoes, mix well and sauté for 2 min.
5. Add salt, mix well and sauté for 10-12 min.
6. Add surti papadi, coriander powder, red chilli powder, turmeric powder, turmeric powder and dry mango powder mix well and sauté for 2 min.
7. Cover and cook for 15 min. stir in between.
8. Remove the cover, mix well and sauté for 1 min.
9. Add chopped coriander and mix well.
10. Remove in serving plate, garnish with coriander leaves and serve hot.
