Aloo suva ki sabji

Serving –4 nos
Preparation time – 15 mins
Cooking time – 10 mins

Ingredients                         quantity
Baby potatoes(par boiled)   1 cup
Fresh dill leaves                  2 bunch
Oil                                       2-3 tbsp
Cumin                                 1 tsp
Asafetida                            a pinch
Green chillies(slits)             8 – 10 nos
Ginger juliennes                 2 inch
Salt                                     to taste
Coriander powder              1 tbsp
Red chilly powder              ½ tspn
Turmeric powder               ½ tspn
Dry mango powder            1 tspn
Garam masala                   ½ tspn
Fresh coriander leaves      2- 3 tsp

Method :
1. In a pressure cooker par boil the baby potatoes for 1 whistle .
2. Let it cool down and cut it into half , keep aside .
3. Heat oil in a non stick pan & add cumin seed , asafoetida , green chilly , ginger, , sauté it well .
4. Now add baby potatoes ,sauté it well for 4-5 mins .
5. Add salt ,coriander powder ,red chilly powder ,turmeric powder , dry mango powder , garam masala , mix it well on a slow flame for a min.
6. Once the baby potato is almost done , add dill leaves , mix well for 2 mins .
7. Now add coriander leaves , stir well for a min .
8. Transfer it to serving plate , garnish with ginger julienne & serve hot .
