Recipe Description

My Mothers style of making this unique frankie/Roll by dipping it in gram flourbatter which keeps it soft and enhances the taste, try this method

Vegetable Roll

Ingredient                           Quantity
Leftover Roti                       2 No.
For Filling:
Oil                                       1 tbsp
Ginger chopped                  1 tsp
Green chilli chopped           1 no.
Cumin seeds                      ½ tsp
Boiled Potatoes                  3 No.
Turmeric powder                ¼ tsp
Red chilli powder                ½ tsp
Garam masala powder       1 tsp
Black Salt                           ¼ tsp
Salt                                     to taste
For Gram Flour Slurry:
Gram flour                          ½ cup
Asafoetida                          Pinch
Turmeric powder                Pinch
Red chilli powder               ¼ tsp
Garam masala powder       ½ tsp
Salt                                     to taste
Black salt                            ¼ tsp
Water                                 as required
For Assembling:
Onion slice                          1 no.
Water                                  as required
Black salt                            ¼ tsp
Red chilli powder                 ½ tsp
Salt                                       to taste
Green Chilli Sauce               2 tsp

Method:
For Filling:
1. Heat oil in a pan; add ginger and green chilli chopped and mix well.
2. Add cumin seeds, mix well and sauté for 1 min. or till cumin is brown in color.
3. Add boiled potatoes, break and mash well.
4. Add turmeric powder, red chilli powder, garam masala powder, black salt and salt, mix well and
sauté for 1 min.
5. Remove in bowl and keep it aside.
For Gram Flour Slurry:
6. Take mixing bowl, add gram flour, asafoetida, turmeric powder, red chilli powder, garam masala
powder, salt, black salt and water, mix well and make a thin batter.
7. Heat oil in non stick pan, Take one roti deep in gram flour slurry and place it on hot pan and
cook the roti from both the side.
8. Remove in a chopping board and Repeat the same steps to make another roti.
9. Put leftover gram flour slurry in to the hot pan and cook from both the side. Remove in a plate
and keep it aside.
For Assembling.
1. Take slice onion in a mixing bowl, add water and mix well.
2. Through the water and add black salt, red chilli powder and salt, mix well and keep it aside.
3. Place the roti on chopping board, put prepared potato mixer, cooked gram flour, slice onion and
green chilli sauce on one side and roll the roti.
4. Wrap the Roll in paper and serve hot with tomato ketchup and onion.
