Pineapple Tepache

Ingredients                  quantity
Pineapple                    1 nos
Water                           1 ltr
Sugar                           5-6 tsp
Ginger                          1 inch
Cinnamon stick            1 nos

Methods :
1. Cut the crown off the pineapple and discard
2. Wash the outside of the pineapple with water, making sure to get rid of any dirt particles.
3. Peel the pineapple and keep it aside.
4. Take a glass jar , add 2 cups of water and sugar stir well until sugar dissolves completely .
5. Now put the skin of pineapple and keep it aside.
6. Take half pineapple and cut it into strips and add into the jar. Press well.
7. Crushed the ginger and add to the jar.
8. Add cinnamon stick and Compress pineapple mixture using a ladle ,add remaining water .
9. Cover it with a lid , not to air tight and keep it in a cool place for 48 hrs .
10. Once the mixture is fermented strain and transfer it into bottle , refrigerate it .
11. Serve it cool .
