Recipe Description

Panjiri
Ingredient                 Quantity
Raw Turmeric          100 gm.
Ghee                       ¼ cup
Raisins                    1 tbsp
Wheat flour              1½ cup
Pistachio chopped   1½ tbsp
Almond chopped     1½ tbsp
Cashew nut chopped 1½ tbsp
Ginger powder         1 tsp
Jaggery grated        ½ cup

Method:

1. Wash, peeled and slice the turmeric.
2. Heat ghee in a pan, add turmeric slice, mix well and fry till turmeric are crisp.
3. Remove in a plate and keep it aside.
4. Add raisins in a pan and fry till raisins puff up.
5. Remove in parat and keep it aside.
6. Switch the flame at low temperature, add wheat flour, mix well and sauté for 2-3 min.
7. Remove in parat and keep it aside.
8. Add chopped pistachio, almond and cashew nut in same pan and dry roast for 1 min.
9. Remove in a parat, add ginger powder and jaggery and mix well.
10. Take fried turmeric in grinder jar and grind well.
11. Add this into the prepared mixture and mix well until mixture is cool down.
12. Remove in serving plate and serve.
