Surkh Kukkad(Punjabi Style Chicken)

Ingredients                   Quantity

For Masala

Black Cardamom          2-3 No.
Coriander Seeds          1 Tbsp
Cumin Seeds                1 Tsp.
Green Cardamom         8-10 No
Black peppercorn          1 Tbsp.
Cinnamon                      1 Stick
Cloves                            4-5 No
Kashmiri chilies dried     3-4 No.
For Chicken
Oil                                   3-4 Tbsp.
Chicken with bone (cut into cube) 500 gm
Onions                            2 No. (Medium)
Ginger garlic paste         1 Tspn.
Tomatoes finely chopped 2 No. (Large)
Salt                                 To taste
Ghee                               2 Tbsp.
Coriander leaves(chopped) 2 Tbsp
Green chili, slit                4-5 No

Method:
1. Dry roast black cardamom, coriander seeds, cumin seeds, cardamom, black peppercorns, cinnamon stick, cloves and dried red chilies in a pan on medium flame for 4-5 minutes and grind it.
2. Heat oil in a pan. Add onion and sauté for 4-5 minutes. Then add ginger garlic paste and sauté again.
3. Add tomatoes and salt in the pan. Cook for 4-5 minutes.
4. Add chicken pieces and mix well. Add half of the Masala mixture from the blender. Add green chilies. Close the lid and let it cook for 15 minutes.
5. Add ghee and coriander leaves in the pan and mix well. Let it cook for 5-6 minutes.
6. Finally add rest of the Masala from the blender in the pan and cook again for 3-4 minutes.
7. Garnish with lemon, carrot and coriander leaves and serve.
