Sambhar Chicken Curry

Ingredient                          Quantity

Oil                                     1 Tbsp.
Asafoetida (hing)              ½ Tsp.
Chicken breast cubes      250 Gm.
Mustard seeds                 1 Tsp.
Green chilly slit                 3-4 No.
Curry leaves                    10-12 No.
Split red lentils (masoor dal) raw ½ Cup
Turmeric powder              1 Tsp.
Tomatoes chopped (large) 1 No.
Onions ½ inch juliennes (large) 1 No.
Bhindi (okra) cubes (medium) 2-3 No.
Eggplant cubes                2-3 No.
Red chilly powder            1 Tsp.
Sambar powder               2 Tbsp.
Ginger garlic paste          1 Tsp.
Tamarind paste               2 Tbsp.
Coconut milk                 ½Cup
Coriander chopped       1 Tbsp.
Water                            as required
Salt                                to taste

Method:
1. In a pan heat oil, add hing, mustard seed, green chilly slit, curry leaves, masoor dal
2. and sauté for 1 min.
3. Add turmeric powder, salt, tomatoes, onion, bhindi, eggplant, red chilly powder, sambar powder
4. and mix well.
5. Add water, ginger garlic paste and mix well. cover and cook on a medium flame for 15 min. or till dal become soft.
6. Add chicken, tamarind paste and mix well finally add coconut milk, coriander chopped and cook for 2-3 min. remove from heat and serve hot

Chef ki Chefgiri:- Eggplant has high fiber and no fat therefore, it is good for diabetic patients. As a precaution, cook it in less oil or roast it. Eat it with other vegetables to get more benefits.
