Paneer Makhani

Ingredient                                Quantity
Tomatoes                                 6-8 No. (800 Gm)
Paneer Cut into cube               200 gm
Green Cardamom                    6-8 no.
Mace                                        1 Small blade
Garlic chopped                         4-5 Cloves
Cashew nuts                             6 No.
Kashmiri Red chilli powder        1 tbsp (Home Tbsp)
Butter                                        80 Gm.
Ginger Juliennes                       ½ inch
Green Chilli Slit                         2-3 no.
Fresh cream                              ½ cup (100 ml.)
Kasoori Methi                            1tsp
Honey                                        1 Tbsp
Salt                                            to taste
Oil                                             1 tbsp + 1 tsp
Method:
1. Cut the tomatoes into cube size and keep it aside.
2. Heat oil in a wok, Add green cardamom, mace and chopped garlic, mix well and sauté
for 30 sec.
3. Add tomato cubes, mix well and sauté for 5-6 min.
4. Add Salt and cashew nuts, mix well and sauté for 4-5 min.
5. Add kashmiri red chilli powder, mix well and sauté for 1 min.
6. When tomatoes get pulpy, switch of the flame and keep it aside to cool for 10-12 min.
7. After 10-12 min. grind it to a smooth paste.
8. Strain the tomato gravy in a bowl and Keep it aside.
9. Heat 1 tsp of oil and 2 tbsp of butter in same wok.
10. Add green chilies, ginger julienne, mix well and sauté for 1 min.
11. Add Strain tomato gray in to the pan, mix well and cover and cook for 10-12 min. on
slow flame, stir continuously.
12. Add remaining butter, mix well and cook for 6-8 min.
13. Add fresh cream and mix well.
14. Add paneer cube and kasoori methi, mix well and cook for 2 min.
15. Switch of the flame, add honey and mix well.
16. Remove in serving bowl; sprinkle kasoori methi on top. Garnish with fresh cream and
serve hot.
