Recipe Description

Ingredients                                Quantity

Refined flour                             1 ½ cup
Oil                                             1tbsp+ 2tbsp+ for drizzling
Salt to taste
Water as required
Cabbage shredded                   ½ no.
Carrot julienned                        1 no.
Vinegar                                     1tsp+ 1tbsp
Coriander                                  1 bunch
Mint leaves                                ¼ part
Green chilies chopped              2-3 no. + 1tsp
Garlic                                        2-3 no.
Ginger                                      1 inch+ 1tsp
Chaat masala                           1 tsp+ ½ tsp
Paneer                                      250 gms
Onions slice                              1 no.
Capsicum                                  ½ no.
Red bell pepper                        ½ no.
Yellow bell pepper                    ½ no.
Coriander powder                     1 ½ tsp
Red chili powder                       1tsp
Garam masala                          1tsp
Dry mango powder                   1tsp
Turmeric powder                       ¼ tsp
Black pepper                             ½ tsp
Red chili sauce                         1tbsp+ 1tsp
Tomato ketchup                        1tbsp+ 1tbsp
Green chutney                          2 tbsp
Mayonnaise                              1 tsp

Method
1. First in bowl add refined flour, oil, salt, and water and make a dough and keep aside for resting by applying little oil on top of it.
2. Now in another bowl add cabbage, carrots, salt and vinegar and mix it properly and keep aside.
3. Now for chutney in a mixer grinder, add coriander leaves, mint leaves, green chilies, garlic, ginger, chaat masala, salt to taste, vinegar and little water and mix it into the grinder properly. Remove in a bowl and keep aside.
4. Now take Paneer and cut into long cubes.
5. Now in pan add oil, ginger, green chilies, and saute for a while.
6. Now add onion slices, green capsicum, red bell pepper, yellow bell pepper and saute for 2 mins.
7. Now add coriander powder, red chili powder, Garam masala. Dry mango powder, turmeric powder, black pepper powder, red chili sauce, tomato ketchup, green chutney which we prepared, salt to taste and mix it properly, add Paneer and mix it again.
8. Now let’s take the dough and roll it out into chapatti, divide it into 2 parts and roll it in round shape.
9. Roast the chapatti on the tawa from both the sides. It should be half cooked. Do same with the other dough also.
10. Now in the mixture of cabbage and carrot add ketchup, chili sauce and chaat masala and mix it properly and keep aside.
11. Now again apply oil on the chapatti and now cook fully from both the sides on the tawa.
12. Now on the first roll add green chutney, cabbage carrot mixture, onions, mixed bell peppers, Paneer mixture, chaat masala, mayonnaise, some more green chutney and wrap it properly and then Grill on the tawa by brushing oil from the top.
13. Cut the kathi rolls from between and then wrap in a paper.
14. Serve hot.
