Recipe Description

Sweet Potato Muffin
Ingredient                        Quantity
Butter                              100 gm.
Powdered sugar             150 gm.
Yogurt                             100 gm.
Milk                                 100 ml.
Sweet Potatoes boiled and mash 200 gm.
Refined flour                   200 gm.
Baking powder               ½ tsp
Baking soda                   ½ tsp
Salt                                ½ tsp
Vanilla essence             1 tsp

Method:

1.Preheat the oven at 180 c for 10 -15 min.
2.In a medium large bowl, whisk butter and sugar together until smooth and creamy.
3.Add yogurt and milk and mix well.
4.Add mash sweet potatoes and whisk well.
5.Add vanilla essence and whisk well.
6.Sieve the flour, baking soda, baking powder and salt and fold the mixture well.
7.Spoon the batter evenly on to silicon muffin molds. Fill the mold 3/4th only.
8.Tap the molds and Bake in preheated oven at 180 c for 25-30 Min.
9.After 25-30 min. remove from the oven; Insert a knife or skewer into one of the muffins check if it comes out clean.
10.Set aside to cool for 10 min.
11.Remove the muffins from the mold and serve.
