Recipe Description

Patiala Shahi Gosht

Ingredient Quantity
Mutton 600 gm.
Tomatoes 2 no.
Onion slice 3 no.
Khus khus 1 tbsp
Almond 14-16 no.
Coriander seeds 1 tbsp
Yogurt 2 tbsp
Fresh Coconut 50 gm.
Ghee 2 tbsp
Bay leaf 2 no.
Cinnamon stick 1 inch
Black cardamom 2 no.
Mace 1 no.
Cloves 3-4 no.
Black pepper crushed 1 tsp
Ginger grated 1½ inch
Garlic chopped 10-15 no.
Salt to taste
Turmeric powder ½ tsp
Red chilli powder 1½ tbsp
Water as required

Method:
1. Heat water in a pan.
2. Make a cross in the bottom of the tomato and add to the water and blanched them for 1 min.
3. Remove in cold water and peel them.
4. Chopped the tomatoes and keep it aside.
5. Dry roast the khus khus, almond and coriander seeds for 1 min.
6. Remove in grinder jar, add yogurt and grind well.
7. Add fresh coconut and grind again into a fine paste. Keep it aside.
8. Heat ghee in a pan, add bay leaf, cinnamon stick, black cardamom, mace, cloves and black pepper crushed, mix well and sauté for 1 min.
9. Add slice onion, mix well and sauté till onions are brown in color.
10. Add ginger, mix well and sauté for 30 sec.
11. Add garlic chopped, mix well and sauté for 30 sec.
12. Add mutton, mix well and sauté for 4-5 min.
13. Add salt, mix well and sauté for 2 min.
14. Add turmeric powder and red chilli powder, mix well and sauté for 2-3 min.
15. Add chopped tomatoes, mix well and sauté for 4-5 min.
16. Add water, mix well and cover and cook for 30-35 min.
