Recipe Description

Nutria soya kulcha

Prep time – 10min
Cooking time – 30mins
Serving pax – 4no.

Ingredient Quantity
For dry masala
Bay leaf 2 no.
green cardamom 5 no.
black cardamom 1no.
Black pepper 1½ tsp
Cinnamon stick 1inch
Cloves 5 no.
Coriander seeds 1tbsp
Cumin seeds 1tsp

For soya

Water as required
Tea leaves 1 tbsp
Salt to taste
Soya nuggets 1cup
Oil 1tbsp
Butter 1tbsp + 1tbsp + 1tsp
Cumin seeds 1tsp
Chopped onion 2 no.
Ginger chopped 1tbsp
Green chilies chopped 3-4no.
Tomato chopped 2 no.
Salt to taste
Coriander powder 1 tbsp
Aam chur 1 ½ tsp
Red chili powder 1tsp
Turmeric powder ¼ tsp
Garam masala 1tsp
grinded masala 1tbsp + 1tsp for sprinkle
Water as required
Soya sauce 1 tsp
Kasuri methi for sprinkle
Kulcha 2 No

Method
1. In pan add bay leaf, green cardamom,black cardamom, cloves, black pepper, cinnamon stick, coriander seeds, cumin seeds and dry roast them and grind it In mixing jar.
2. Now in pan add water and tie the tea leaves in muslin cloth and put it in the water along with soya nuggets and salt, let it boil it becomes soft.
3. Once it is cooked let it be in the water and keep aside.
4. Now in pan add oil, butter, and jeera and cook till the jeera gets brown in color.
5. Now add onion chopped, ginger chopped and sauté in till the onions get brown in color.
6. Now add green chilies chopped, tomatoes chopped, salt to taste and sauté till tomatoes get cooked.
7. Now add coriander powder, red chili powder, aam chur powder, turmeric powder, grinded masala, garam masala and sauté it properly.
8. Now add water and let it cook for 10- 12 mins.
9. Once it is cooked add soya sauce and mix well.
10. Strain the water from soya and add the soya nuggets in the gravy and mix well.
11. Let it cook for 10 mins.
12. Add butter for more rich taste.
13. Now add butter in pan and cut the kulchas from center and roast the kulchas in it.
14. Its ready, serve it in a bowl, sprinkle some grinded masala and kasuri methi.
15. Serve hot it with kulchas.
