Ingredient                 Quantity
For Marination:
Chicken on Bone      800 gm.
Ginger-garlic paste   1½ tbsp
Lemon juice              1 no.
Red chilli powder      2 tsp
Turmeric powder      ½ tsp
Garam masala powder 1 tsp
Salt                           to taste

For Masala:
Bay leaf                      1 no.
Black cardamom        2 no.
Green Cardamom      4-5 no.
Cinnamon stick          ½ inch
Cloves                        4-5 no.
Star anise                   1 no.
Mace                          ½ blade
Black peppercorn       1 tsp
Coriander seeds         1 tbsp
Cumin seeds              1 tsp
Dry red chilli               4-5 no.
Garlic chopped           1 tbsp
Ginger chopped          1 tbsp
Dried Coconut             100 gm.
Poppy seeds               1 tbsp
White sesame seeds   1 tbsp
Onion Slice                  2 no.
Tomato chopped          2-3 no.
Water                           ¼ cup
Oil                                 6 tbsp
Salt                               to taste
Coriander sprig             for garnish

Method:
For Marination:
• Wash and pat dry the chicken and place it on the bowl.
• Add ginger-garlic paste, lemon juice, red chilli powder, turmeric powder, garam masala powder and salt, mix well and keep it aside for 20-25 min.

For Masala:
• Heat 3 tbsp of oil in a kadai; add bay leaf, black cardamom, green cardamom, cinnamon stick, cloves, star anise, mace, black peppercorn, mix well and sauté for 1 min.
• Add coriander seeds, cumin seeds, mix well and sauté till spices are fragrant.
• Add dry red chillies, garlic chopped, ginger chopped, mix well and sauté for 30 sec.
• Add dried coconut, poppy seeds, white sesame seeds, mix well and sauté for another 1min.
• Add onion slice, mix well and sauté for 4-5 min. on low flame.
• Add chopped tomato, mix well and sauté for 4-5 min.
• Remove in a bowl and cool it to a room temperature
• Take mixer jar, add prepared masala and ¼ cup of water and grind to a smooth paste. Keep it aside.
• Heat 2-3 tbsp of oil in kadai; add marinated chicken and sauté for 8-10 min.
• Mean while Put little water to the marinated bowl and mix well. Keep it aside.
• After 10 min. add prepared paste to the pan and mix well and cook for 4-5 min.
• Put water in a mixer jar, mix well and put into the pan and mix well.
• Add salt, mix well and cover and cook for 15-20 min.
• Remove in serving bowl, garnish with coriander sprig and serve hot.
