Recipe Description

Aloo Palak

Ingredient                    Quantity
Boiled potatoes                   3 no.
Oil                                       3 tbsp
Cumin seeds                      1 tsp
Dry red chilli (small)           4-5 no.
Ginger chopped                 1 tbsp
Garlic chopped                  1 tbsp
Green chilli chopped          3-4 no.
Onion chopped                  2 no.
Tomato chopped               3 no.
Spinach puree                  1½ cup.
Red chilli powder              1½ tsp
Coriander powder             1½ tbsp
Garam masala powder     1 tsp + for sprinkle
Turmeric powder               ½ tsp
Amchur powder                1½ tsp
Salt                                    to taste
Water                                 as required
Ghee                                  2 tbsp + 1 tbsp

Method:
1.Heat oil in a pan; add cumin seeds and dry red chillies, mix well and sauté till cumin splutter.
2.Add chopped onion, mix well and sauté for 4-5 min. or till onion are brown in color.
3.Add chopped ginger, garlic and green chillies, mix well and sauté till garlic gets light brown in color. 4. Add tomatoes, mix well and sauté for 1 min.
5.Add salt, mix well and sauté for 2-3 min.
6.Add red chilli powder, coriander powder, garam masala, amchur powder and turmeric powder, mix well and sauté for 3-4 min.
7.Break the potatoes and add to the pan and mix well
8.Add ½ cup of water, mix well and sauté for 4-5 min.
9.Add spinach puree, mix well and cook for 1 min.
10.Add ghee, mix well and cook for another 1 min.
11.Remove in serving bowl, sprinkle with some garam masala and add ghee on top and serve hot.
