Ingredients Quantity
Oil 1 tbsp
Asafetida ½ tsp
Kalonji (onion seeds) ½ tsp
Fennel Seeds 1 tsp
Mustard Seeds ½ tsp
Cumin Seeds 1 tsp
Fenugreek Seeds ¼ tsp
Raw Mango (grated) 1 cup
Raw Turmeric (grated) ½ cup
Jaggery (grated) 1 ½ cup
Red Chilli Powder 1 ½ tsp
Turmeric Powder ½ tsp
Salt to taste
Vinegar 1 tbsp
Method
• Heat oil in a pan, add asafetida, kalonji (onion seeds), fennel seeds, mustard seeds, cumin seeds, fenugreek seeds and sauté well.
• Add raw grated mango, raw grated turmeric, grated jaggery, red chilli powder, turmeric powder, salt and cook well till the jaggery melts.
• Add vinegar and mix well.
• Cook well for 10-15 minutes and keep stirring.
• Once cool down, pack it in the air tight container and keep it in a dry cool place.
