Recipe Description

Sweet and sour garlic pickle

Ingredients:-

  • Garlic cloves – 3 cups
  • Fresh ginger pieces, peeled – 2 no
  • Brown mustard seeds – 1½ teaspoons
  • Fenugreek seeds – 1 teaspoon
  • Cumin seeds – 1 teaspoon
  • Vegetable oil – 1½ cups
  • Table salt – 1 teaspoon
  • Tamarind pulp – ½ cup
  • Red chile powder – 1½ teaspoons
  • Grated jaggery – ½ cup

 

Method:-

  1. Peel, wash and pat dry the garlic cloves. Grind half of them with ginger and crush the remaining.
  2. Place a non stick medium sized pan on medium heat and let it heat for 2 minutes. Add 1 teaspoon of mustard seeds, fenugreek seeds, cumin seeds and dry roast for 2 minutes or till fragrant. Cool and grind it to coarse powder in a blender.
  3. Place a non stick deep pan on medium heat and pour in 1 cup oil. When small bubbles appear at the bottom of the pan, add the remaining mustards seeds and the crushed garlic. Reduce heat to low and cook for 3-4 minutes on low heat.
  4. Increase heat to high, add salt, roasted and ground spices and tamarind pulp and cook for 5-6 minutes.
  5. Add chile powder, ginger-garlic paste and jaggery and cook on medium heat for 1 minute or till the jaggery melts.
  6. Add the remaining oil and cook till the pickle thickens a bit.
  7. Cool and store in a sterilized bottle.
