Delicious Stuffed Aubergine and potato Sabzi Gujarati Style
Ingredients
- For stuffing
- Aubergines (small) – 10-20no
- Turmeric powder -1tsp
- Red chilli powder – 1 tsp
- Garam masala- ½ tsp
- Salt to taste
- Ginger garlic paste- ½ tsp
- Coriander cumin powder – 1 tsp
- Oil- ½ tsp
- For gravy
- Oil – 2tbsp
- Cumin seeds – ½ tsp
- Onion – 1small
- Tomato chopped – 1 large
- Salt to taste
- Red chilli powder – 1tsp
- Coriander cumin powder – 1 tbsp
- Garam Masala Powder- ½ tsp
- Boiled baby potato – 11/2 cup
- Coriander chopped -2 tbsp
Method:-
- Slit the aubergine into four and keep aside.
- In a bowl add turmeric powder, red chilli powder, ` garam masala powder, salt, coriander cumin powder and oil and mix well.
- Now stuffed the aubergine with the prepared mixture and keep aside.
- Heat oil in a pan add cumin seeds , once spluttered add chopped onion and sauté well
- Add chopped tomatoes, salt, red chilli powder, turmeric powder, coriander cumin powder , garam masala powder and saute well.
- Add little water and cover cook until the tomatoes are mushy.
- Add The aubergine and water and cover and cook for sometime.
- Now add potato and water if required cook for 7-8 mints.
- Lastly add chopped coriander and mix
- Remove it in a serving bowl and serve hot.
