Recipe Description
An unusual green tomato curry served garnished with sev.
Ingredients:-
- Green tomatoes – 8 no medium
- Oil – 2 tbsp
- Cumin seeds – 1 tsp
- Finely chopped ginger – 1 tbsp
- Chillies, finely chopped – 2 green
- Garlic cloves, finely chopped – 8-10 no
- Red chilli powder – 1 tsp
- Cumin powder – 1 tbsp
- Coriander powder – 1 tbsp
- Garam masala powder – 1/2 tsp
- Dried mango powder (amchur) – 1 tsp
- Salt – to taste
- Bhuna masala – 130 grams
- Finely chopped fresh coriander leaves – 1 tbsp
- Garlic sev – for garnishing
Method:-
- Roughly chop the tomatoes and grind into a purée .
- Heat oil in a non stick pan. Add cumin seeds and sauté till fragrant. Add ginger, green chillies, garlic and sauté till garlic becomes light golden.
- Add tomato purée and cook for 6-8 minutes.
- Add red chilli powder, cumin powder, coriander powder, garam masala powder, dried mango powder salt and sauté for 2-3 minutes
- Add bhuna masala and cook for 1-2 minutes. Add finely chopped coriander and mix well.
- Transfer into a serving bowl, garnish with garlic sev and serve hot.
