Quick and easy south indian style potato preparation
Baby Potatoes, washed, boiled 30 no
Onion cut into cubes 1 no. (Large)
Turmeric powder ¾ tsp
Red chilli powder 1 tsp
Coriander powder 1½ tbsp
Salt to taste
Oil 1 tbsp
Mustard seeds ½ tsp
Urad dal 1 tsp
Curry leaves 1sprig
Garlic cloves crushed 2-3 no.
- Heat oil in a pan add mustard seeds, curry leaves, garlic and sauté till garlic browns.
- Add onion cubes, Urad Dal, and sauté till urad dal browns.
- Add baby potatoes, coriander powder, turmeric powder, and Red chilli powder, salt and mix well.
- Remove in a serving bowl and garnish with coriander sprig.
- Serve hot.
