Ingredients quantity
Oil 3tbsp+ 3tbsp
Green Cardamom 3-4no.
Cinnamon stick 2no. + ½ no.
Star anise ½ no. + 1no.
Cloves 3-4no. + 2-3 no.
Cumin seeds 1tsp + 1tsp
Whole coriander seeds 1 ½ tsp
Black pepper 1tsp+ 1tsp
Whole red chili 5-6 no.
Grated coconut ½ cups
Sliced onions 3no.
Khus khus 1tbsp
Ginger chopped 1 ½ tbsp
Garlic chopped 1 ½ tbsp
Green chilies 3-4no.
Curry leaves 15-20no.
Coriander powder 1 ½ tbsp
Red chili powder 2tsp
Garam masala 1tsp
Turmeric powder ½ tsp
Salt to taste
Chicken 800gms
Coriander 1tbsp
Method
- In pan add oil, green cardamom, cinnamon stick, star anise, cloves, cumin seeds, whole coriander seeds, black pepper, whole red chilies, grated coconut, sliced onions and sauté till it for 8-18mins properly.
- Now add khus khus in it and sauté again.
- Keep aside, till it is completely cool down.
- Our mixture is ready to blend in a mixture jar, make a fine paste of it.
- Now in pan add oil, star anise, cinnamon stick, cloves, cumin seeds, ginger chopped, garlic chopped and sauté it properly.
- Now add curry leaves, chopped green chilies, and add the grinded paste in it.
- Now add turmeric powder, coriander powder, red chili powder, garam masala and salt to taste and cook for at least 8-10 mins properly.
- Once masala leaves oil, add chicken in it and cook on medium flame for 20-25mins.
- Now add chopped coriander leaves in it.
- Our chicken sukka is ready to serve.
- Garnish with coriander and serve hot.
