Recipe Description
Bhindi pakodas are gram flour coated bhindi or lady finger pakoda recipe. The bhindis are coated with spiced besan batter and deep fried to create an innovative bhindi pakora recipe.
Ingredients:-
- Lady fingers, small size – 20-25
- Dry mango powder – 1½ teaspoons
- Red chilli powder – 2 teaspoons
- Coriander powder – 2 Tablespoons
- Cumin powder – 1 teaspoon
- Black salt – ½ teaspoon
- Peanuts, roasted and coarsely ground – 1½ Tablespoons
- Salt – to taste
- Gram flour – 2 cup
- Rice flour – 3 Tablespoons
- Ginger and garlic paste – 1 teaspoon
- Asafoetida – ¼ teaspoon
- Carom seeds – ½ teaspoon
- Turmeric powder – ¼ teaspoon
- Baking soda – ½ teaspoon
- Oil – to deep fry
- Chaat masala – ¼ teaspoon
Method:-
- Trim the two ends of the lady fingers and slit vertically and put into a bowl.
- In a pan pour oil and heat. Add about two tablespoons of gram flour and cook on slow flame for about two minutes. Remove and add dry mango powder, one and half teaspoon red chilli powder, coriander powder, cumin powder, black salt, coarsely ground peanuts and salt to taste. Mix well and set aside.
- Stuff this mixture into the lady finger slits and set aside.
- Mix gram flour, rice flour, carom seeds, turmeric powder, ginger and garlic paste, balance red chilli powder and salt in another bowl. Add sufficient water gradually and whisk to make a thick and smooth batter.
- Heat sufficient oil in a kadai. Dip lady fingers in the gram flour batter and half fry them. Drain on absorbent paper.
- Heat the oil again and deep fry the lady fingers till they turn golden brown and crisp. Drain on absorbent paper.
- Sprinkle some chaat masala, arrange them on a satay sticks and serve hot with green chutney.
