Ingredients Quantity
Batter for sheet
Refined flour ½ cups
Corn flour ½ cups+ for dusting
Salt to taste
Water as required
Oil 1tsp+ 1tsp
For filling
Oil 1tbsp
Ginger chopped 1tsp
Garlic chopped 1tsp
Green chilies chopped 3no.
Onion slices 1no.
Cabbage slices ½ no.
Carrot juliennes 1 small
Capsicum juliennes 1no.
French beans 4-5no.
Salt to taste
Soy sauce 1tbsp
Red chili sauce 2tbsp
Green chili sauce 2tbsp
Ketchup 2tbsp
Vinegar 1tbsp
Sugar 1tsp
Spring onion 1tbsp
For gum paste
Refined flour 1tbsp
Corn starch 1tbsp
Water as required
Oil for frying
Method
1. In bowl add refined flour, corn flour, in equal quantity and add salt, water and make slurry for spring onion sheets.
2. Whisk the batter with hand to activate the gluten in it.
3. Batter should be thin in consistency. Add oil at the end and mix I properly.
4. Let it rest for some time.
5. Now in pan add oil and let it heat properly, and remove the oil from the pan and wipe it with tissue paper.
6. Now take a ladle full of batter and rotate it properly on all the side.
7. Now in one plate sprinkle corn starch on it and keep aside.
8. Similarly do with all the batter and dust the corn starch so it does not stick to each other.
9. Sheets will come out easily from sides once it is done.
10. Keep the sheets on the corn starch dusted plate.
11. Now in pan add oil and let it heat.
12. Now add chopped garlic, chopped ginger, chopped green chilies and sauté it properly.
13. Now add slice onions, and sauté it, now add cabbage slice, carrot, capsicum and French beans and sauté it properly.
14. Now add salt as required, soy sauce, red chili sauce, green chili sauce, tomato ketch up and mix it properly.
15. Now let the vegetables get cooked properly.
16. Now do the vegetables on side and let the water burn from it.
17. Now add vinegar, sugar and mix it properly.
18. Dry the vegetables properly. Vegetable is ready keeping it aside.
19. Cool down completely and then use it.
20. Add spring onions and mix it again.
21. Now make slurry of corn flour and refined flour by adding water in it.
22. Now take the sheets, apply the gum paste on the corner of the sheet, then put the filling in the center.
23. Now roll the sheet from all the sides, make sure that it is not opened from the sides.
24. Do same with all the sheets.
25. Keep the oil for heating, once it is done put the spring rolls in it.
26. Crisp fry the spring rolls till golden brown.
27. Cut the spring rolls sheets from the center.
28. Serve hot in a plate with tomato ketchup and green chutney.
