Ingredients                                                                                                          quantity

Gram flour                                                                                                          ½ cup + 2tbsp

Nachni flour                                                                                                       ¼ cup

Oats flour                                                                                                           ¼ cup

Jowar flour                                                                                                        ¼ cup

Turmeric powder                                                                                             ¼ tsp

Ginger chopped                                                                                               1tsp

Green chilies chopped                                                                                      2-3 no.

Cumin seeds                                                                                                    1tsp

Curd                                                                                                                 3tbsp

Water                                                                                                               as required + as required

Semolina                                                                                                         2tbsp

Salt                                                                                                                  to taste

Palak chopped                                                                                               10-12 leaves

Fenugreek leaves chopped                                                                            1cup

Carrot grated                                                                                                  1no.

Bottle gourd grated                                                                                         2tbsp

Onion chopped                                                                                               1no.

Grated boiled potatoes                                                                                   1no.

Coriander leaves chopped                                                                             1tbsp

Baking Soda                                                                                                   a pinch

Oil                                                                                                                   for drizzle

 

 

Method

  1. In pan add gram flour, nachni flour, oats flour, jowar flour, turmeric powder, ginger chopped, green chilies chopped, cumin seeds, curd, and water as required and mix it properly.
  2. Now add semolina, salt to taste, water as required and set the batter properly.
  3. Keep the batter aside for 10mins.
  4. Meanwhile, chop the palak, boil the grated bottle gourd till one boil, now strain it from the water and keep aside.
  5. Now take the batter, add chopped palak, fenugreek leaves, bottle gourd, chopped onion, grated carrot, grated boiled potato, chopped coriander and mix altogether with batter and adjust the consistency of it.
  6. Add gram flour to adjust the consistency of the batter.
  7. Let the batter set for 5-10 mins.
  8. Now temper the frying pan with the help of oil, once the pan is set remove the oil from it and cover it with lid.
  9. Now add a pinch of soda in the batter just before the cooking.
  10. Now add the batter in the pan and drizzle little bit of oil on the corner.
  11. Cook the pancakes on slow flame.
  12. Check the pancake from one side and flip on the other side if cooked properly.
  13. On other side as well cook on low flame.
  14. Our healthy pancakes are ready.
  15. Serve hot with sauce, chutney.
