Recipe Description

Turai Patra features an unusual combination of ridge gourd and patra. For people who don’t know Patra is Arbi’s leafy part. It has many health benefits as it has various anti-oxidants, minerals, vitamins and nutrients.Apart from all these it is easy to cook so try this delicious vegetarian dish at home and share your experience.

Ingredients                                                  Quantity

Turai                                                                1 no. (big)

Mustard seeds                                                1/2 tsp

Cumin seeds                                                   1/2 tsp

Hing (Asafoetida)                                            1/2 tsp

Turmeric                                                         1/2 tsp

Coriander powder                                           1/2 tsp

Green chili paste                                            1/2 tsp

Patra (Alu wadi)                                              5-6 nos

Oil                                                                   1 1/2 tbps

For green paste:

Fresh coriander chopped                               1 cup

Grated coconut                                               1 cup

Garlic pods                                                    8- 10

Ginger                                                           1/2 inch

Lemon juice                                                   2 lemon

Sugar                                                            1 tsp

Salt                                                                to taste

Water                                                             as required

 

Method:

  1. Wash, peeled and cut the turai into cube size. Keep it aside.
  2. Take a Blending jar, add Coriander leaves, grated coconut, garlic, ginger, lemon juice, sugar, salt and some water and grind to a smooth paste.
  3. Heat oil in a pan; add mustard seeds, cumin seeds, hing, grinded green paste, salt, turmeric powder, coriander powder, green chilli paste, turai cubes, mix well.
  4. Cover and cook for 4-5 min.
  5. Add Patra (alu wadi), mix well and cook for 1 min.
  6. Remove in serving plates and serve hot.
