Recipe Description

You just can’t stop eating these delicious crisp puris topped with potato, chutneys and sev

Ingredients:-

  • Potatoes, boiled, peeled and cut into ¼ inch cubes  – 2 large
  • Green mango – 1 small
  • Crisp maide ki papdi (also known as puris) – 24 no
  • Table salt – to taste
  • Red chile powder – ¼ teaspoon
  • Red onions, chopped  – 2 medium
  • Green mint and coriander chutney – 3 tablespoons
  • Garlic and red chile chutney – 1 teaspoon
  • Sweet date and tamarind chutney – ¼ cup
  • Sev – 1 cup
  • Chaat masala – 1 ½ teaspoons
  • Chopped fresh cilantro leaves – 2 tablespoons

Method:-

  1. Wash the green mango. Peel and halve it lengthways. Scoop out the pit. Then place the mango on a board and chop it into ¼ inch squares.
  2. Place the potatoes in a bowl, add the mango, salt and chile powder. Mix well.
  3. Arrange the maide ki papdi in a single layer on a large plate.
  4. Take a spoonful of the potato mixture and place on each papdi. Sprinkle the onions on each papdi.
  5. Drizzle a little green chutney, red chutney and sweet date and tamarind chutney over each papdi with a spoon.
  6. Sprinkle the sev generously over the chutneys so that the chutneys are not seen.
  7. Sprinkle the chaat masala and garnish lastly with the cilantro leaves.
  8. Serve immediately.
