Recipe Description

South Indian style khichdi made with moong dal, rice, ghee, and cashewnuts.

Ingredients:-

  • Sprouted whole green gram (whole moong) – 1 cup
  • Split skinless green gram (dhuli moong dal) – 1 cup
  • Soaked rice – 2 cups
  • Ghee – 1 tbsp
  • Black peppercorns – 1 tsp
  • Cumin seeds – 1 tsp
  • Asafoetida – 1/4 tsp
  • Finely chopped ginger – 1 tbsp
  • Curry leaves – 10-15 no
  • Green chillies, roughly chopped – 3 no
  • Cashew nuts – 12-15 no
  • Bunch spinach, finely chopped – 1 no medium
  • Salt – to taste

 

Method:-

  1. Heat ghee in a non stick kadai. Add black peppercorns, cumin seeds, asafoetida and sauté till fragrant.
  2. Add ginger, curry leaves, green chillies and sauté for 1-2 minutes. Add cashew nuts and sauté for 1-2 minutes.
  3. Add moong dal and sauté for 1-2 minutes. Add whole green gram and sauté for 2-3 minutes. Add spinach and sauté for 3-4 minutes. Add rice and mix well. Add water, salt and mix well. Cover and cook till the dal is cooked.
  4. Transfer into a serving dish
