Recipe Description

Kurkure kamal kakdi made with Lotus Stem (Kamal Kakadi) are very tasty and crispy, Kids like to eat it for snacks and even adults can take them with evening tea.

 Ingredients:-
  • Lotus stems – 4
  • oil – to deep fry
  • Black salt – 1 teaspoon
  • Red chilli powder – 2 teaspoon
  • Chaat masala- 2 teaspoon
  • Dry mango powder – 1 teaspoon
  • Dry fenugreek leaf powder – ½ teaspoon
  • Salt – to taste
  • Lettuce – a few leaves

 

Method:-

  1. Trim lotus stems from both ends and wash thoroughly under running water. Peel and cut into thin, long diagonal slices.
  1. Heat sufficient rice bran oil in a kadai. Add the lotus stem slices and deep-fry till half done. Drain on an absorbent paper.
  1. Reheat the oil and deep-fry the slices again till they turn golden brown and crisp.Drain on an absorbent paper.
  1. Sprinkle black salt, red chili powder, chaat masala, dry mango powder, dry fenugreek leaf powder and salt and toss.
  1. Make a lettuce bed in shot glasses and place the fried lotus stem slices in them and serve hot.
