Ripe banana relish served as an accompaniment
Ingredients:-
- Tamarind pulp – 4-5 tablespoons
- Jaggery, grated – ½ cup
- Water – 2 cups
- Red chile, broken into (2) – 1no dried
- Soonth (dry ginger powder) – ½ teaspoon
- Red chile powder – ½ teaspoon
- Cumin powder – ½ teaspoon
- Saunf (fennel seeds) – 1 teaspoon
- Table salt – ½ teaspoon
- Green skinned ripe banana, peeled and cut into round slices – 1 large
Method:-
- Place a non stick deep pan on high heat. Add in tamarind pulp, jaggery, water and bring to a boil, stirring continuously.
- Reduce heat to low, add chile, soonth, red chile powder, cumin powder, fennel seeds and salt and cook for 15-20 minutes.
- Add the banana slices. Cook for 4-5 minutes. Check for seasoning. Remove from stove top and cool and serve chilled.
