Recipe Description

Unique cauliflower fritters

  • Small whole boiled cauliflower – 1 no
  • Red chilli powder- 1 tsp
  • Chat masala – 1 ½ tsp
  • Salt – to taste
  • Turmeric powder – ¼ tsp
  • Lemon juice – ½ no
  • For batter
  • Gram flour – 1 ½ cup
  • Carom seeds – 1 tsp
  • Red chilli powder – ½ tsp
  • Turmeric – 1 tsp
  • Water – as req
  • Salt – to taste
  • Soda bi carb – a pinch
  • Oil – to deep fry
  • Red chilli powder to sprinkle
  • Chat masala to sprinkle
  • For chutney\sauce
  • Green chilli sauce – ½ cup
  • Radish grated – ½ no
  • Chopped ginger – ½ tsp
  • Red chilli powder – ½ tsp
  • Water – as req
  • Coriander chopped – 1 tsp

 

Method

  1. Cut the boiled cauliflower in to 4 florets and keep it in a bowl
  2. Marinate the cauliflower with chat masala, red chilli powder, salt, turmeric powder, and add ½ lemon juice and mix it nicely.
  3. In another bowl make the batter with gram flour, carom seeds, Red chilli powder, turmeric, water as required, salt, and soda bi carb.
  4. Dip the marinated cauliflower in the batter and fry until half cooked.
  5. Remove it on a paper towel and press the pakodas with your hands and again deep fry it until crisp.
  6. Cut the pakodas into byte size pieces and serve with green radish chutney.
  7. For chutney mix all above ingredients and serve.
