Recipe Description

Ganthiya tomato saakh is a popular Gujarati style sweet and sour tomato curry prepared with tomato, ganthiya, onion and other Indian curry spices.

 

Ingredients:-

  • Tomatoes- 3 nos
  • Mustard Seeds – ½ tsp
  • Cumin seed – ½ tsp
  • Curry leaves – 5-6
  • Asafoetida – Pinch of
  • Ginger chopped – 1 tsp
  • Garlic chopped – 1 tsp
  • Green chillies chopped – 2-3
  • Onion – 1medium
  • Oil – 2-3 tbsp
  • Turmeric Powder- 1/2th tablespoon
  • Red Chilli Powder- 1tsp
  • Garam masala powder- 1tsp
  • Salt – to Taste
  • Jaggery- 1 ½ tbp
  • Bhavnagri gathiya -1cup
  • Water – 1 cup
  • Coriander chopped- 1 tbsp

 

Method :-

 

  1. Roughly chop some tomatoes.
  2. Heat oil in a deep bottom pan add mustard seeds and asafoetida, cumin seed . Allow the seeds to crackle.
  3. Now add ginger chopped, green chilli chopped , garlic and saute well.
  4. Add chopped onions and saute.
  5. Now add chopped tomatoes.
  6. Sauté the tomatoes for a minute and add red chilli powder, turmeric, Garam masala powder and salt.
  7. Cook the tomatoes for a minute and add 1 cup water.
  8. Stir well and bring the water to boil.
  9. Add jaggery and mix well.Now add gathiya and mix well and add chopped coriander and mix it once and serve it with rotis or rice.
