Recipe Description

Ganthiya tomato saakh is a popular Gujarati style sweet and sour tomato curry prepared with tomato, ganthiya, onion and other Indian curry spices.

 

Ingredient                                                      Quantity

Tomatoes roughly chopped                            3 no.

Mustard Seeds                                                 ½ tsp

Cumin seed                                                      ½ tsp

Curry leaves                                                     5-6 no.

Asafoetida                                                        Pinch

Ginger chopped                                               1 tsp

Garlic chopped                                                 1 tsp

Green chillies chopped                                    2-3 no.

Onion                                                               1 no. (Medium)

Oil                                                                    2-3 tbsp

Turmeric Powder                                            ½ tbsp

Red Chilli Powder                                           1tsp

Garam masala powder                                   1tsp

Salt                                                                   to Taste

Jaggery                                                            1½ tbsp

Bhavnagri gathiya                                           1cup

Water                                                               1 cup

Coriander chopped                                         1 tbsp

 

Method:-

  1. Roughly chop some tomatoes.
  2. In a pan heat oil and add cumin seeds, mustard seeds curry leaves, garlic, ginger, green chilles and sauté for 1 mins
  3. Add onions, salt, and sauté for 2-3 mins
  4. Add tomatoes, red chilli powder, turmeric powder, garam masala, add water and cover and cook for 5-7 mins or till tomatoes become pulpy
  5. Add jaggery and mix well.
  6. Add gathiya and chopped coriander and mix well
  7. Switch off the flame and remove in a serving bowl
  8. Serve hot with roti or rice.
