Recipe Description
Ganthiya tomato saakh is a popular Gujarati style sweet and sour tomato curry prepared with tomato, ganthiya, onion and other Indian curry spices.
Ingredient Quantity
Tomatoes roughly chopped 3 no.
Mustard Seeds ½ tsp
Cumin seed ½ tsp
Curry leaves 5-6 no.
Asafoetida Pinch
Ginger chopped 1 tsp
Garlic chopped 1 tsp
Green chillies chopped 2-3 no.
Onion 1 no. (Medium)
Oil 2-3 tbsp
Turmeric Powder ½ tbsp
Red Chilli Powder 1tsp
Garam masala powder 1tsp
Salt to Taste
Jaggery 1½ tbsp
Bhavnagri gathiya 1cup
Water 1 cup
Coriander chopped 1 tbsp
Method:-
- Roughly chop some tomatoes.
- In a pan heat oil and add cumin seeds, mustard seeds curry leaves, garlic, ginger, green chilles and sauté for 1 mins
- Add onions, salt, and sauté for 2-3 mins
- Add tomatoes, red chilli powder, turmeric powder, garam masala, add water and cover and cook for 5-7 mins or till tomatoes become pulpy
- Add jaggery and mix well.
- Add gathiya and chopped coriander and mix well
- Switch off the flame and remove in a serving bowl
- Serve hot with roti or rice.
