Recipe Description

Egg Curry in Maharashtrian Vidarbh style. Looks delicious ain’t it, then why not try this in your kitchen.

Ingredients

  • Oil – 2 ½ tbsp
  • Onion chopped – 1 large
  • Ginger and garlic paste- 2 ½ tsp
  • Turmeric Powder – ½ tsp
  • Coriander powder – 3 tsp
  • 1/4cup Coriander leaves +,20g fresh coconut and 2 no  green chilli grounded  into paste- 2 tbsp
  • Salt- to taste
  • Red Chilli Powder -3 tsp
  • Eggs boiled – 4-5 nos
  • Water -1 cup

 

Method:-

  1. Heat oil in a pan add chopped onion and sauté until golden brown
  2. Add ginger garlic paste sauté for 2-3 mint .
  3. Add turmeric powder, coriander powder and sauté well
  4. Add the coriander, coconut and green chilli paste , salt and sauté well.
  5. Now add red chilli powder and water and bring the gravy to a boil
  6. Cut the boiled eggs into half and add it to the gravy, cover and cook for 5-10 mints.
  7. Once done remove it in a serving bowl and serve hot garnish it with coriander sprig.
