Recipe Description

Bhindi or Okra can be made with many variations say Onions, potatoes, etc. during summers its best to add yogurt.

 

Ingredients:

  • Oil – 2 Tbsp
  • Asafoetida – 1/4 tsp
  • Mustard Seeds – 1/2 tsp
  • Cumin Seeds – 1/2 tsp
  • Curry Leaves – 10-12
  • Green chilli Chopped – 1 tsp
  • Ginger Chopped – 1 tsp
  • Garlic Chopped – 1 tsp
  • Onion Cubes – 1 large
  • Okra – 150 gms
  • Potato cubes – 2 large
  • Turmeric powder- 1/4 tsp
  • Red Chili powder – 1/2 tsp
  • Coriander powder –  1 tsp
  • Garam Masala powder –  1/2 tsp
  • Salt to taste
  • Tomato cubes – 1 large
  • Coriander Chopped – 1 Tbsp
  • Yogurt-  1 cup

 

Method:

  1. Add oil in a heating pan.
  2. Add Asafoetida, mustered seeds, cumin seeds and as the cumin and mustered seeds crackle, add Curry leaves, Green chillies, ginger and garlic
  3. Add onions, okra and potatoes.
  4. Saute for 5 to 6 mins for everything to cook.
  5. 5. Add spices turmeric powder, red chilli powder, coriander powder, salt, garam masala, and mix it well.
  6. Add tomatoes, coriander,
  7. close the induction.
  8. whisk the yogurt and add the yogurt while serving.
  9. Add mint leaves to garnish.
