Recipe Description

Tasty Maharashtrian Style Baigan Bharta


  • Roasted Aubergine- 2 large
  • Roasted tomato – 3 no
  • Roasted green chilli – 3no
  • Spring onion chopped – ½ bunch
  • Turmeric powder – 1tsp
  • Coriander powder – 2 tsp
  • Red chilli Powder – 2 ½ tsp
  • Coriander chopped – ¼ cup
  • Salt – to taste
  • Oil- 2tbsp


  1. In a bowl add peeled aubergine, roasted peeled tomatoes and roasted green chilli and mashed well.
  2. Add salt and mix. Heat oil in a pan add chopped spring onion and saute well.
  3. Add turmeric powder, coriander powder, red chilli powder, and mix well.
  4. Cook it for some time. Lastly add chopped coriander and mix well.
  5. Remove it in a serving bowl and serve hot.
