Recipe Description

Boiled potatoes sautéed with onions, mustard seeds, curry leaves, green chillies and turmeric to make a quick sabzi.

 

Ingredients:-

  • Medium potatoes – 10 no
  • Oil – 2½ tablespoons
  • Asafoetida (hing) – a pinch
  • Mustard seeds – ½ teaspoon
  • Cumin seeds – ½ teaspoon
  • Split black gram (dhuli urad dal) – 1 teaspoon
  • Red chillies, broken in half – 3 dried
  • Curry leaves – 10 no
  • Green chillies, chopped – 3 no
  • Onion, chopped – 1 large
  • Turmeric powder – ½ teaspoon
  • Salt – to taste
  • Fresh coriander  chopped – 2 tablespoons

 

Method:-

  1. Wash and wipe the potatoes dry.
  2. Rub one tablespoon of oil over the potatoes, arrange on a microwave-safe plate and cook, uncovered, on 900 W for ten minutes. Cool, peel and cut into one-inch cubes.
  3. Place the remaining oil in a microwave-safe bowl together with the asafoetida, mustard seeds, cumin seeds, split black gram, red chillies, curry leaves, green chillies, onion and turmeric powder. Cook, uncovered, for two minutes on 900 W.
  4. Add the salt and potato cubes and cook on 900 W, uncovered, for five minutes.
  5. Serve hot, garnished with the fresh coriander.
